So much better to give on the way to school or practice than something pre-made :)

1 1/2 cups gluten free oats ( I used bobs red mill)
1/4 cup flax seeds
1/4 tapioca flour
1 cup rice flour
1 tsp xanthan gum
1 tsp baking powder
1 cup unsweetened applesauce
1/2 cup almond milk ( vanilla is a nice touch)
1 egg white

1/4 cup oats
1 Tbl brown sugar
1/2 tsp pumpkin spice
1Tbl meted earth balance

Beat all the ingredients together and pour into greased muffin cups in a muffin tin, about 3/4 full. In a small bowl make the topping and add to top. Bake at 400 for 20 min until toothpick comes out clean.
