This is a STAPLE in our house!!!! Muffins, loaf, pan....

1 cup cornmeal
1 cup rice flour
2/3 cup sugar
3 1/2 tsp baking powder
3/4 tsp xanthan gum
1 cup almond milk
1 egg
1/3 cup oil

Mix all the dry stuff together, make a little well and add all the wet. Mix well. Grease pan and bake at 375 for about 20 minutes until done.
